  • No Rose Forge product should go through the dishwasher.

  • All knives should be washed with warm, soapy water and rinsed thoroughly. Stainless steel knives may be left to air dry. High carbon steel knives should be thoroughly dried immediately to avoid rusting.

  • Thoroughly wash with with warm soapy water and rinse completely. Dry thoroughly before storing.

    After several uses or after cutting very acidic foods (tomatoes, citrus, etc.), run the blade under hot tap water. Once the blade hot, coat the blade with the provided, food-safe beeswax by rubbing it on the hot blade. Dry with a paper towel and store as usual.

  • Stainless steel has a high chromium content which acts as a protective layer from rust.

    High carbon steel has a high carbon content and will quickly rust when exposed to moisture.

  • That truly depends on you. While high carbon knives can rust if not properly cared for, they also maintain a sharper edge longer that a stainless knife.

    However, if you a use a kitchen knife often and do not want to quickly dry it after each use, stainless may be best for you.

    Bottom line - stainless if easier to maintain as it will not rust. If you are worried about moisture, this is the right choice for you. High carbon is the better choice for you if your knife will be kept away from moisture or simply displayed.
